ANALYSIS THE QUALITY OF MEAT PRODUCTS

Abstract


The meat is considered an basic aliment due to its high nutritional value, and the share of meat and meat products in the diet is high.

The paper carries out a study on the comparative analysis of the quality of some meat products using for this purpose methods of calimetry. Following the application of these methods, the product variants chosen in the study are ranked according to the values of the quality indicators determined by calculation.
